I want to tell you something…I am not much of a chip fan. Tortilla chips, potato chips, even veggie chips. It’s not that I hate them, but, meh. I have always been more of a pretzel girl. Now pretzels are something delicious.
I have no idea why a Potato Chip Cookie would sound appealing, I suppose it’s the sweet, salty, crunchiness of it all. I’m glad I made these. These are rich, buttery, sweet & salty delights.
The original recipe is posted here at Smitten Kitchen. The only thing you need to do to make these vegan is sub out the dairy butter for equal parts Earth Balance Buttery Spread. Then follow the recipe as written. The cookies are great, omnivore tested and approved. 🙂
